Red Bean Cheesecake

In 1998 on my first-ever flight to China, I found a menu for the return flight which featured red bean cheese cake.  During the two weeks in China I couldn't get that out of my mind.  When I eventually flew out the red bean cheesecake was nothing like what I had imagined (whole beans rather than paste).  Some 14 years later, I set out to create red bean cheesecake as I had imagined it.  [View photos]
